Ingredients

1 litre full-cream milk

Method

In a heavy pan, simmer milk on low heat until it reduces to half, stirring occasionally.

Add sugar, saffron, and cardamom; mix well.

Stir in almonds and pistachios; cook 2–3 minutes.

Cool the mixture slightly, pour into kulfi moulds or small cups.

Freeze for 6–8 hours or overnight. Run moulds under warm water for a few seconds to release.
