Ingredients

  • 1 litre full-cream milk

  • ¼ cup sugar (adjust to taste)

  • ¼ cup chopped almonds

  • ¼ cup chopped pistachios

  • A few saffron strands (optional)

  • ½ tsp cardamom powder

Method

  1. In a heavy pan, simmer milk on low heat until it reduces to half, stirring occasionally.

  2. Add sugar, saffron, and cardamom; mix well.

  3. Stir in almonds and pistachios; cook 2–3 minutes.

  4. Cool the mixture slightly, pour into kulfi moulds or small cups.

  5. Freeze for 6–8 hours or overnight. Run moulds under warm water for a few seconds to release.

Tips & Variations

  • Add a splash of rose water for a floral touch.

  • Use condensed milk for extra creaminess (reduce sugar).

  • Garnish with extra chopped nuts before serving.

Serving suggestion

Slice kulfi into discs and sprinkle more pistachios on top.
